It's insanely adorable to see the things our kids pick up. I don't mean pick up like cleaning up (although that's pretty awesome!) but I mean take our cues and copy what we do.

J and I were having one of our mega-video Sundays where we bring in a babysitter and knock out a bunch of videos until we collapse from exhaustion. Usually the girls are at my parents house, but they're out west hanging with my in-laws (a thing that often shocks people- but yes, our parents hang out and vacation together. I'm pretty sure they like each other better than J and I, haha- just kidding #notreally).

And overhead image of a couple of bowls of Cabbage and Beans with Parmesan cheese.

So our friend who watched the gals for us had just left and A woke up from her nap. We were midway through our last video and A helped us prep a couple last minute ingredients. She told us she wanted to help so we told her she could join us downstairs and watch.

Of course A happened to find the box of play food that was in the basement (we have our video stuff set up down there). Well that gal sat herself down and got to work telling us she was preparing her "ingrediences" and then said she was making a video.

It was funny because at that moment, I was basically elbow deep in ground beef and after a few minutes, J read my mind like he always does and said "are you dying to get a video of this?" and I immediately said "yes!" It was making his heart explode just as much as mine was.

Our family has a few different uses for our marinara sauce and this is one of them. If you're looking for a cheap meal that's as delicious and as it is comforting, I've got you covered!

Now I know it kind of sounds weird. I think cabbage and beans are two things that aren't always at the top of everyone's list when planning their meals. And I get it. When I was a kid, if you had told me I was going to eat cabbage and beans, I'd turn my nose up at the mere thought. But if you had put a bowl of this stuff in front of me, I'd devour it and ask for more.

This is the perfect way to take three super low cost ingredients and make meals for a few days. I like to sprinkle a little grated Romano cheese on top and if I'm feeling especially spicy, some crushed red pepper. You can even add some shredded chicken to throw some additional protein into mix (I actually did this with the Cabbage and Beans in the photos- it was a great lunch all week!).

    Cuisine budget, Easy, Family, Italian
    Servings 6 -8

    Ingredients

    • ½ large head of cabbage cut into bite size chunks
    • 1-2 14 oz. cans of Canellini or great northern beans drained
    • A few cups of marinara sauce depending on how liquid-y you want it

    Instructions

    • Boil the cabbage for 5-10 minutes until it's softened.
    • Drain it well.
    • Combine in a large pot with beans and sauce.
    • Cook until heated through.
    • Enjoy with a sprinkle of Romano cheese and crushed red pepper.

    Notes

I left the ingredients very vague on purpose- It's all about the ratio that you like best. If you like more beans, add more beans. If you prefer it saucier, go heavy on the sauce.
This also tastes great with shredded chicken breast added for additional protein.

Thanks for the idea. It's harder to get groceries, nowadays, so I'm always looking for what i can make with what I have. This looks fun and adaptable!
