This California Breakfast Stack is a delicious way to start your day- it's light, fresh and seriously easy to make!

Ingredients

  • 1 English muffin, sliced in half
  • 2 slices pepper jack cheese or your favorite cheese
  • 4 slices bacon, fried until crispy
  • Cooking spray
  • 2 large eggs
  • 1 medium tomato, thinly sliced
  • Salt and pepper, to taste
  • 1 small ripe avocado, peeled, seed removed and thinly sliced (you can sprinkly these with lemon or lime juice to keep it from turning brown)

Instructions

  1. Preheat the oven to 350° and line a small sheet pan with foil.

  2. Lightly toast the english muffin halves in a toaster.

  3. Place the English muffin halves with the inside facing up onto a foil-lined pan.

  4. Place a slice of cheese onto each English muffin half and place it in the oven for 10 minutes.

  5. While the cheese melts, fry your eggs to your liking, being careful not to break the yolk (I opted for sunny side up but this would also be great with over easy or over medium eggs). Set aside when finished.

  6. Remove the English muffins from the oven when the time is up.

  7. Place two slices of bacon onto each English muffin half (I break the bacon slices in half to help them fit better).

  8. Top these with sliced tomatoes and sprinkle with salt and pepper to taste.

  9. Next place the sliced avocado on top of each English muffin half.

  10. Finally place a cooked egg onto each breakfast stack and sprinkle them with salt and pepper to taste. Serve immediately.
