Salmon Patties are a tasty light lunch and are great for brunch with the family! They're quick and easy to make and offer an excellent way to use up leftover salmon.

Ingredients

  • 1 1/2 cups cooked salmon, shredded
  • 1/2 cup panko bread crumbs
  • 1 large egg
  • 1/2 teaspoon dried dill
  • 1/4 teaspoon paprika
  • 1/2 teaspoon seasoned salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon garlic powder
  • 2-3 dashes hot sauce, I used franks Red Hot
  • 1/2 lemon (juice only) + more for serving
  • 1 Tablespoon mayonnaise
  • Tartar sauce for serving

Instructions

  1. Place all ingredients except for the oil and tartar sauce in a mixing bowl and stir until well combined.

  2. Divide the mixture into 4 portions and shape tightly into 1/2 inch patties.

  3. Heat 2-3 Tablespoons oil over medium high heat in a large sauté pan.

  4. Once oil is hot, add patties to the pan.

  5. Cook for 3-4 minutes per side until nicely browned, rotating if necessary for even cooking, turning once.

  6. Remove patties to paper towel-lined plate to drain excess oil. Serve immediately with lemon wedges and tartar sauce.
