Ingredients

cucumber
diced

Kalamata olives
rough chopped

fresh parsley

Instructions
Cook the couscous according to the package directions.
Mix together all of the ingredients except for the couscous.
Top the ingredients with the hot couscous and mix well. Serve immediately or refrigerate until serving.
Notes
This will last up to 4 days covered in the refrigerator and can be served warm or cold.
