Apple Spice Muffins are one of my favorite fall recipes. Made with tasty chunks of apple, applesauce with cinnamon, nutmeg and ginger, they're so easy to make and taste great as breakfast or as a dessert!
2large Granny Smith applespeeled, cored and diced into ½ inch pieces
Instructions
Preheat the oven to 350 degrees and line your muffin pans with muffin cups (or if you'd prefer not to use muffin cups, you can instead grease your pan with cooking spray).
Beat together your eggs and oil until well combined.
Add the next 6 ingredients and beat until just combined.
Add your applesauce and diced apples and mix quickly until fully combined.
Scoop your batter into your muffin pan, filling the muffin cups almost to the top.
Bake for about 20 minutes or until your cake tester comes out clean.
Enjoy once they've cooled!
