Hold the ginger in your hand over a bowl or a trash can.
Take the spoon in the other hand and gently but firmly scrape the spoon along the area of the ginger that you want to peel. I peel away from me out of habit but you can also peel toward you since the spoon isn't sharp.
Repeat all around the ginger until the peel is completely removed leaving the fresh inside of the ginger.
Prepare as per your recipe.
Notes
This is best to do right before using. You can also freeze the ginger once peeled or grated.
