Baked Breakfast Tostadas are one of my favorite easy recipes to make for breakfast (or lunch- or brunch!). This is simple cooking at it's finest with corn tortillas, salsa, black beans, cheese and eggs. You can get creative and take it in whatever direction you'd like- this quick and delicious dish is definitely a keeper!

Instructions
Preheat your over to 400 degrees F. Line a pan with foil for easy clean up and spray it with cooking spray.
Place your corn tortillas onto the pan, spray them lightly with cooking spray and bake uncovered for 10 minutes (they should be golden and lightly crispy).
When the 10 minutes is almost up begin heating your pan for your eggs and spray with cooking spray.
Top your tortillas with a layer of salsa, then beans and then a sprinkle of cheese.
Crack your eggs into your pan and then place the tostadas back into the oven for 5-7 minutes to melt the cheese.
Cook your eggs to your level of doneness and once the eggs are to your liking, remove the tostadas from the oven, top them with your eggs and serve immediately.
