What should you do with that leftover chicken? Make Chicken Caesar Wrap Pinwheels, of course! Featuring crunchy lettuce, tender chicken, and flavorful Caesar dressing, they're super easy. Ready in just 20 minutes, this recipe is a seriously delicious lunch or healthy appetizer.
Spread a thin layer of Caesar dressing onto each tortilla, to completely cover it.
Scatter chicken and Romaine lettuce evenly over the tortilla.
Carefully and tightly roll the tortilla up and away from you, leaving the seam side down.
Cut the wraps into 1 inch thick slices.
Carefully insert a toothpick into the seam of each slice to hold it together.
Refrigerate until you're ready to eat.

Use leftover chicken- I can't stand food waste. This recipe is a delicious and healthy way to repurpose leftover grilled or rotisserie chicken.
Spread the dressing in a thin layer over the whole tortilla- Not only is it delicious, but it also helps hold the chicken pinwheels together.
Lightly shred the lettuce and chop the chicken into small pieces- This makes for easier cutting (to take it from a wrap to actual pinwheels) and cleaner eating.
Feel free to throw in your favorite add-ons- I kept these pretty simple, but there are so many extras that would be awesome additions. Tomatoes, red onion, pepperoncini, Kalamata olives, mushroom... the world is your oyster!
Make sure you wrap tightly- You don't want your chicken pinwheels to fall apart on you.
Use toothpicks for easier cutting- They'll keep everything rolled up nice and tight and allow you to space them cutting thckness for yourself. Plus they're so festive for parties.
Ingredients to prep ahead- If you don't have any leftovers to work with, you can cook the chicken in advance. Once cooled, chop it up into small pieces and refrigerate until you're ready to use. You can also wash and chop the lettuce.
Leftovers and storage- You can store leftovers in the fridge in an airtight container for up to 2-3 days. I do suggest eating them sooner rather than later as the dressing will cause the wraps to go soft over time.
