This easy green peas recipe is a simple, comforting side dish that comes together in about 30 minutes. Made with just a handful of ingredients, it’s perfect for busy weeknights but just as great alongside a holiday meal.
In a medium sauce pan, heat the oil over medium high heat.
Add the onions to the pan and season with salt and pepper.
Sweat the onions for a few minutes stirring often until they are soft but not browned.
Add peas to the pan and sauté for a couple minutes, stirring often.
Add water to just cover the peas and bring everything to a boil. Once boiling, the heat to medium.
Simmer for about 15-20 minutes or until the water has reduced to a very small amount and the peas are cooked. Taste and add more salt and pepper if needed. Serve immediately

Notes
Let the onions cook low and slow, so they soften and turn slightly sweet without browning. That’s what gives the dish its best flavor.
Once you add the peas, stir them often so they cook evenly and don’t stick to the pan. No need to stir once you add the water.
Don’t worry if there’s still a little liquid left toward the end. You want most of it to cook off, but a small amount helps keep everything soft and flavorful.
Swap the water for broth for a little extra flavor. It’s a simple upgrade that makes a difference. Either vegetable or chicken broth will work.
If you’re using fresh peas, keep an eye on them as they cook. They’ll soften more quickly than frozen peas.
