4pork chops, Boneless or bone-in - a little more than one inch thick
1teaspoonKosher saltto taste
¼teaspoonGround black pepperto taste
1teaspoonGarlic powderto taste
1teaspoonHerbes de Provenceto taste
Instructions
Remove from the refrigerator 15-20 minutes prior to grilling.
Spray the grill with cooking spray and preheat the grill to medium high heat.
Season the pork chops on both sides with salt, pepper, garlic powder and Herbes de Provence.
Place meat on the grill.
Cook for 5-6 minutes per side, turning once (this time will vary based on your grill and the thickness of the meat so keep an eye on it). Cook until the thickest part registers 140 degrees F.
Remove the meat to a clean plate and tent with foil. Rest for 10 minutes. Serve immediately.

Always bring the pork chops to room temperature before grilling. Taking them out of the fridge 15-20 minutes ahead helps them cook more evenly.
Season both sides generously. Don't be shy with the rub, as the seasoning is what makes these so flavorful.
Don't press down on the chops while they're grilling. It squeezes out the juices and can dry them out.
Only flip once! Constant flipping prevents a good sear from forming and causes uneven results.
