Why You'll Love This Roast Delicata Squash Recipe
Truth be told: I'm not a big squash fan. I've come around to it a bit over the years, but overall, it's not my first choice of veggie. That said, one kind of squash I find to be delicious is Delicata Squash. The flavor is similar to a sweet potato and the skin is thin and edible, so you don't have to peel it.
I've been meaning to develop a recipe for this squash and this year, I finally got around to it. This is a side dish that is as pretty as it is delicious. By pairing this squash with a tangy herbed yogurt sauce and topping with tart pomegranate arils and crunchy pepitas, you've got a side dish that is sure to impress.

Ingredient Information and Substitutions
- Delicata Squash- This is the star of the show! Baked until tender, with golden edges and the flavor of sweet potatoes. You can also use butternut or acorn squash. I flavor it with neutral oil (avocado or vegetable oil work great!) salt, pepper and garlic powder. And half way through roasting, I brush it with just a little bit of honey for a hint of sweetness and gorgeous caramelization. Tip: if you like a kick, use hot honey!
- Herbed Yogurt- Plain yogurt brings the perfect tang. I like to mix in salt, pepper, lemon juice and fresh herbs. My herbs of choice for this are parsley and thyme but you can always use your favorite fresh herbs.
- Toppings- The toppings for this add the perfect texture and pop of color. I love pomegranate arils for a bit of fruit flavor and crunchy pepitas for an unforgettable texture. Be sure to check out my post on how to peel a pomegranate so you don't end up with stained hands!
How To Make This Roasted Delicata Squash Recipe
Step 1- Make the herbed yogurt
Mix yogurt, salt, pepper, lemon juice and chopped herbs until well combined. Refrigerate until serving.
Step 2- Season squash and spread on a pan
Drizzle prepared squash with oil and season with salt, pepper and garlic powder. Spread in a single layer on a parchment-lined sheet pan and bake at 425 degrees for 20 minutes.
Step 4- Brush honey onto squash slices
Flip the squash slices and lightly brush with honey. Bake for 20 more minutes.
Step 5- Plate the squash
Spread the herbed yogurt along a medium serving plate. Top with roast squash and sprinkle with pomegranate arils and pepitas and serve immediately.

Baked Delicata Squash With Herbed Yogurt
Ingredients
- 3 medium delicata squash cleaned, seeds removed and sliced
- 1 ½ teaspoons Kosher Salt divided
- 1 teaspoon ground black pepper divided
- 1 teaspoon garlic powder
- 1-2 Tablespoons honey melted
- 1 ¼ cup plain yogurt
- 1 Tablesppon chopped fresh thyme
- 1 Tablespoon chopped fresh parsley
- 1 Tablespoon lemon juice
- ⅓ cup pomegranate arils
- ½ cup pepitas
Instructions
- Preheat oven to 425 degrees and line sheet pans with parchment paper.
- Cut each Delicata squash in half length-wise and remove stem. Remove seeds and cut each half into ½ inch slices.
- In a large bowl, combine squash, oil, 1 teaspoon salt, ½ teaspoon pepper and garlic powder. Mix well until squash is evenly coated.
- Divide squash between the pans in a single layer.
- Roast for 20 minutes and remove from oven.
- Flip the squash and brush honey lightly onto each piece of squash.
- Return to the oven and roast for an additional 20 minutes until golden and remove from oven.
- While squash roasts combine yogurt, remaining salt and pepper, lemon juice and chopped herbs in a medium bowl. Mix well.
- Spread yogurt mixture on a medium serving platter.
- Pile squash slices on top of the yogurt mixture. Sprinkle squash with pepitas and pomegranate arils and serve immediately.
