If I were to tell you that I absolutely love Brussels sprouts and that they have always been my favorite vegetable...I'd be lying to you. It took me a while to learn to like Brussels sprouts because they always seemed to come out kind of mushy. But in reality, I was just making them wrong the entire time.
I learned that they can be seriously delicious when I toss them with some oil and a few simple ingredients, and then took freshly grated Parmesan cheese and placed a thin layer along the bottom of my roasting pan. A quick high heat roast allowed me to have tender Brussels sprouts that had a fantastic Parmesan crust. And I've never looked back.

Ingredient Information And Substitutions
- Brussels Sprouts- The star of the show! Look for firm sprouts that are all around similar size of even cooking.
- Parmesan Cheese- Finely grated is the way to go- preferably freshly grated, not shaker cheese. Romano cheese is a great substitute.
- Olive Oil- For great flavor and to help adhere all the seasonings to the sprouts.
- Seasonings- Kosher salt, ground black pepper and garlic powder round out the flavors.

How To Make Roasted Brussels Sprouts In The Oven
Step 1- Prep the oven and the Brussels Sprouts
Preheat the oven to 450 degrees F and line sheet pans with parchment. Trim the bottoms and out leaves from the Brussels sprouts and slice in half.
Step 2- Season sprouts
Combine Brussels sprouts, salt, pepper, garlic powder and half the cheese in a large bowl and toss to evenly coat.

Step 3- Add cheese layer to the pans
Sprinkle a thin, even layer of remaining cheese onto the bottom of the prepared pans. Place Brussels sprouts, flat-side down, on the pans in a single layer.

Step 4- Roast the Brussels sprouts
Roast uncovered for 15-20 minutes until golden brown with crispy bottoms. Serve immediately.

Yes- you have 2 options. The first is trim and prep the spouts in the pan and then roast when ready. The second is to do the recipe and only roast for 10 minutes. Cool completely and finish roasting when ready to serve. Using the second method means they won't be as crispy, but they're still delicious!

- Dry the sprouts well before seasoning. That will help them roast up crispier and helps the oil and seasonings stick to it.
- Cut them to uniform size. Same size = even cooking!
- Don't skip the layer of cheese on the pan. This step really takes this recipe over-the-top. And make sure you put the flat-side down!
- Make sure the Brussels Sprouts are in a single layer on the pan. If they are all just piled on top of each other, they're steam instead of sear and end up mushy and you also won't get the nice crispiness fro mthe cheese. It's totally fine to use 2 pans.
- Prep ahead- Clean, dry and cut the Brussels sprouts.
- Reheating and leftovers- Place in a 350 degree F oven, uncovered for 10 minutes for optimal texture or microwave.

Parmesan Roasted Brussels Sprouts
Ingredients
- 3 pounds Brussels sprouts trimmed and halved
- 3 Tablespoons olive oil
- 1 teaspoon Kosher salt
- ½ teaspoon ground black pepper
- 1 teaspoon garlic powder
- ¼ cup Parmesan or Romano cheese, divided
Instructions
- Preheat oven to 450 degrees F and line sheet pans with parchment paper.
- In a large bowl, combine Brussels sprouts, oil, salt, pepper, garlic powder and half the cheese. Mix well until Brussels sprouts are evenly coated.
- Sprinkle remaining cheese in an even layer on the parchment lined pans.
- Divide Brussels sprouts between the pans, flat-side down in a single layer.
- Bake for 15-20 minutes until Brussels sprouts are a deep brown color, but not burned. Serve immediately.
