    Pulled Pork Tacos, you guys. Ugh, I love this concept so much, I can’t even handle it. Think about it. It's as if two of my favorite things, Pulled Pork and Tacos, got married and had a gorgeous little baby with all the fixings. And here she is in all of her BBQ glory!

    If you’re anything like me, you enjoy pulled pork but you like it even more with a variety of toppings. I’m the worst, I can never leave things well enough alone. I sometimes just have to mess with it in hopes of making it even more delicious. Most of the time it works out and this time was no exception.

    This recipe was inspired by a BBQ taco that was on a menu at a local restaurant. That version was made with brisket and didn’t go too far into specifics about toppings. The minute I saw the words “BBQ Taco” I was instantly inspired, I knew I had to create a version of this.

    I love that you can totally get creative with the toppings. I personally went with shredded cheddar, black beans, coleslaw and some chives to make it pretty. I opted for flour tortillas because that's how I roll, but I bet these would be great with corn tortillas if that's how you roll.

    I think it would be totally fun to mix up the toppings. Jalapenos? Yes. Pickled Red onions? Hell yes. Pepperjack cheese? Hello lover! Have fun with it and make these guys whatever you want them to be. I'm thinking these would be perfect for a party- who doesn't love a taco bar, especially with this fun twist!

    Ingredients
      

    • 8 flour tortillas
    • 4 cups Pulled pork
    • ½ cup your favorite BBQ sauce
    • ½ cup cheddar cheese shredded
    • 1 14 ounce can black beans rinsed and drained
    • 1 cup pre made coleslaw
    • Chopped chives to garnish

    Instructions
     

    • Divide pulled pork between 8 tortillas.
    • Drizzle with BBQ sauce and sprinkle with shredded cheddar.
    • Top with black beans and coleslaw and sprinkle with chives. Serve immediately.

    Notes

    These are best served right away. they will last up to 3 days covered in the refrigerator- for best results store ingredients separately and heat and assemble when ready to consume.
