    Is it just me, or have you guys noticed that life always feels busy? Between school, activities and work, things are crazy. It's times like these that one pot meals are a lifesaver!

    I'm not sure I know anyone who actually likes doing dishes. So when I can find a recipe that has the glorious combo of minimal dishes and super quick turnaround time, you can bet that I make a point to give it a try! And this balsamic chicken breast recipe is definitely one to add to the rotation. PS- if you love balsamic vinegar with chicken, try this Honey Balsamic Chicken Marinade!)

    It's full of fantastic flavor — the zing of the balsamic mellows out a bit when it mixes with the savory flavor of the chicken and other seasonings (along with a tiny bit of sugar for balance). The veggies cook up beautifully, and the chicken ends up being perfectly cooked. If that isn't enough, here are a few more reasons you'll love one pan balsamic chicken:

    Ingredient Information and Substitutions:

    • Olive Oil - I prefer the flavor and versatility of olive oil, but you can use another oil if needed. Just be sure it has a somewhat neutral flavor and a high smoke point.
    • Chicken Breast - This recipe is crafted to use boneless, skinless chicken breasts. However, feel free to use thigh meat or bone-in chicken if desired. Just be sure to adjust cooking times as needed to achieve an internal temp of 165 degrees F after cooking and resting.
    • Balsamic Vinegar - Bold, bright, and zingy balsamic vinegar is the star of the show here! It has one of those flavor profiles that teases just about every tastebud.
    • Sugar - A small touch of sweetness is perfect for balancing and harmonizing the flavor of any dish. If preferred, you can substitute a bit of honey or maple syrup instead.
    • Seasonings - This mouthwatering balsamic chicken breast is brought to you by an all-star cast of spices including rosemary, oregano, black pepper, garlic powder, and salt. Adjust as needed to suit your tastes.
    • Vegetables - I chose crunchy green beans, crisp bell peppers, and savory mushrooms for this one pot balsamic chicken meal. Feel free to switch it up and use carrots, zucchini, tomatoes, onions, or any of your favorite vegetables instead.

    How To Make Balsamic Vinegar Chicken

    Step 1: Sear the chicken.

    Preheat your oven to 350 degrees F and place a large skillet (with the oil) over medium high heat. Add the chicken breasts to the hot skillet and cook for about 4 minutes on each side, or until golden brown.

    Step 3: Make the marinade.

    While the chicken is browning, use a mixing bowl to whisk together the balsamic vinegar, olive oil, sugar, salt, black pepper, oregano, rosemary, and garlic.

    Step 4: Add the vegetables.

    Toss the green beans, mushrooms, and peppers into the pan with the chicken. Carefully pour the marinade over the top and stir to evenly coat.

    Step 5: Cover, simmer and Transfer to oven

    Cover the pan, turn the heat down to medium low, and simmer for 5-7 minutes.

    Remove the cover and transfer the pan to the preheated oven to cook for about 20 minutes. Rest for 5 minutes before serving. The dish is done when the chicken reaches an internal temperature of 165 degrees F.

Make sure to whisk the marinade ingredients together first. For a flavor boost, you can quickly sear the chicken before tossing it in, but it isn't required.

    Tips for Making Easy Balsamic Chicken

    • Don't be afraid to prep ahead of time. This could include trimming the chicken, cutting the vegetables, and even mixing the balsamic sauce. This will make it even easier to throw together.
    • Use a pan that is oven-safe. I'm a huge fan of my Le Creuset Braiser. It's the perfect size for a one pot meal, transfers easily from stovetop to oven, and cleans really easily.
    • This is also great for meal prep. After I photographed this, I packed it up for a few days of work lunches, and it reheated pretty well. I really felt good about the fact that it was on the healthier side without sacrificing great taste. Boom! Easy balsamic chicken meal prep!
    • Add rice. When I make this for my family, I often serve it over rice. It's even better with extra sauce!
    • Leftovers and storage: This will last up to 4 days covered in the refrigerator.

    Ingredients
      

    • 2 Tablespoon olive oil, divided
    • 3-4 boneless skinless chicken breasts
    • ¼ cup balsamic vinegar
    • 1 teaspoon sugar
    • 1 teaspoon salt
    • ¼ teaspoon black pepper
    • ½ teaspoon rosemary
    • ½ teaspoon oregano
    • ½ teaspoon garlic powder
    • 2 cups red bell pepper, sliced
    • 2 cups mushrooms, sliced
    • 2 ½ cups green beans, trimmed of the ends
    • Chopped fresh parsley for garnish optional

    Instructions
     

    • Preheat the oven to 350 degrees.
    • In a large skillet, heat oil over medium-high heat.
    • Cook chicken breasts for 4 minutes per side or until golden brown.
    • In a separate bowl whisk the balsamic vinegar, remaining oil, sugar, salt, black pepper, rosemary, oregano and garlic powder while the chicken is browning.
    • Add the peppers, mushrooms and green beans to the pan and pour the balsamic vinegar mixture over everything. Stir to combine.
    • Reduce the heat to medium low, cover the pan and cook for 5-7 minutes.
    • Uncover and transfer the pan to the oven and bake for 20 minutes or until the chicken reaches an internal temperature of 165 degrees. Sprinkle with parsley and serve immediately.

      This looks fantastic! I can’t eat peppers, if I omit them would I need to change anything to the recipe?

        Thanks Kate- You can totally omit them without issue. You may have a little more sauce but that's never a bad thing- serve it over rice :)
