    Are you guys noticing a trend around here lately? Like this post. And this post. Now here we are: another week, another apple recipe.

    Apple Spice Muffins are one of my favorite fall recipes. Made with tasty chunks of apple, applesauce with cinnamon, nutmeg and ginger, they're so easy to make and taste great as breakfast or as a dessert!

    But I'm not sorry, not even a little bit. For a few reasons. First off, the apples are insane right now and I love them so much! #cantstopwontstop 

    Apple Spice Muffins are one of my favorite fall recipes. Made with tasty chunks of apple, applesauce with cinnamon, nutmeg and ginger, they're so easy to make and taste great as breakfast or as a dessert!

    Also, these muffins are no joke. Perfectly moist, deliciously flavored with spices that pull you so deep into seasonal happiness you'll want nothing but crisp Autumn air and cozy boots forever and ever.

    I cut nice, solid chunks of apple to add into the batter. My apple of choice was Granny Smith, but any other variety that holds up well in baking will work (20 Ounce, Cortland etc.). But I constantly find myself coming back to Granny Smith's when I cook. They add this fantastic tartness the breaks up the typical sweetness of baked goods.

    The finishing touch was a sprinkle of Turbinado sugar. This adds a glorious crunchy texture to the top of them and looks like pretty little diamonds on top of these gorgeous muffins.

    This recipe actually makes a couple dozen muffins, so it's excellent if you're feeding a crowd. You can easily freeze half the batch or better yet share it with a beloved friend or family member (because what better way to share love than with freshly baked muffins?).

    I'll tell you this, when I brought a batch of these into work, my coworkers went at it like a pack of hungry wolves and I'm pretty sure there were no regrets.

    Ingredients
      

    • 4 eggs
    • 1 cup of vegetable or canola oil
    • 3 cups of flour
    • 2 cups of sugar
    • 2 tsp. of baking powder
    • 2 teaspoon of baking soda
    • ½ tsp. of salt
    • 1 tsp. of cinnamon
    • ½ tsp. of ginger
    • ¼ teaspoon of nutmeg
    • 2 cups of applesauce
    • 2 large Granny Smith apples peeled, cored and diced into ½ inch pieces

    Instructions
     

    • Preheat the oven to 350 degrees and line your muffin pans with muffin cups (or if you'd prefer not to use muffin cups, you can instead grease your pan with cooking spray).
    • Beat together your eggs and oil until well combined.
    • Add the next 6 ingredients and beat until just combined.
    • Add your applesauce and diced apples and mix quickly until fully combined.
    • Scoop your batter into your muffin pan, filling the muffin cups almost to the top.
    • Bake for about 20 minutes or until your cake tester comes out clean.
    • Enjoy once they've cooled!

    Notes

    These freeze well once baked and make a great gift!

      Love these muffins - so perfect for fall. I'd like one right now with my coffee as I read your blogpost:). PS - You might want to check the serving size. It says 1 muffin but I'm sure you meant a dozen or 18.

        I think you can- I don't find there to be a huge difference between the two in terms of sweetness because the sugar content is so high in apples to begin with.I;m sure you can come across variations based on the type of apples, but I'm not sure that it would affect it adversely. I could be wrong. Let me know how they turn out!

      I just picked an abundance of Fuji apples from my tree and I made some fresh applesauce(no sugar added) and was looking for a recipe that uses the fresh applesauce and apples. I found your recipe and made a few changes: I reduced the sugar to 3/4 cup and added 1/2 cup monk sugar. I also added a brown sugar, flour and butter topping(lightly sprinkled on top of the muffins before baking). They are SOO Moist and delicious...not too sweet! I will be making these again and will use only the monk sugar. Thank you for sharing your recipe!
