I am totally in the easy-to-throw-together-meal-zone right now. Between my insanely delicious Pork Chops earlier this week, my Stuffed Peppers Rice Skillet and our family favorite Spanish Rice there is nothing standing between me and a quick, delicious dinner (except a hundred million other things I need to get and more importantly, spending time with my favorite girls!).
This recipe was inspired by a pretty killer flat bread pizza I had at a local restaurant a while back during my maternity leave (on a side note I super wish I was still on maternity leave!!). One gorgeous, sunny afternoon in May, I joined my mom and my Grandma Eve for a low key lunch during their errands.
It was a slow day at the restaurant, likely earlier in the week. T was still in the sleepy phase where she was super portable and would catnap all day in her car seat if I would allow her (in all fairness, she's still pretty portable, especially in comparison to her sister. She just likes to be out of her seat more at this point so meals may not be as relaxing now that she tries to grab the food off our plates!).
Even though I knew I should be making smart, healthy eating decisions to attempt to lose my baby weight, I kept coming back to the BBQ Chicken Flatbread on the menu. So after a bit of hand wringing and grappling with my options (just kidding, it was a pretty cut-and-dry decision, because YUM!) My mom and I agree that we would share said flatbread along with a Caprese Chicken Salad, which was also pretty amazing on that trip, though not so great on subsequent meals at this place, sadly. #keepingitreal #stringcheeseisnotfreshmozz #just86itifyoureoutofthemainingredients #exrestaurantmanager. I digress.
But that flatbread, you guys! Not only did it have the great flavor elements of tangy BBQ sauce, savory chicken and cheese. It had some killer texture to it. While some of this was due to using cut up fried chicken fingers, much of the crunch came from the addition of the most crispy, thin fried onion strings. This had all the components you look for in a tasty flatbread and I knew I had to make it.
But I also had to lighten it up, if even a tad. I mean this baby weight isn't going to lose itself! I'm all for moderation. So I used grilled chicken instead of fried chicken fingers. I also subbed in those tasty french fried onions (ya know, the ones that go on green bean casserole at Thanksgiving?) which are kind of my new addiction. They add some killer crunch and excellent flavor as well!
This bakes up in well under 30 minutes and was such a hit with everyone in our home! It's another excellent weeknight option, particularly for those busy nights when you're shuffling the kids between school and activities because it's so fast to make. Serve it with a green salad and you're set for a delicious meal the whole family will enjoy!

BBQ Chicken Flatbread Pizza
Ingredients
- Premade flat bread used Naan from our local grocery store
- The BBQ sauce of your choice
- Shredded Colby cheese
- Grilled chicken cut into bite-size pieces
- French fried onions
Instructions
- Preheat your over to 400 degrees.
- Place your flat breads on the pan and bake for 10 minutes.
- Remove them from the oven an spread a thin layer of BBQ sauce on each flatbread.
- Sprinkle with cheese and top with grilled chicken.
- Return to the oven and bake for 7-10 minutes (until cheese is melted).
- Remove from oven, sprinkle with french fried onions and serve.
- Enjoy!
